Most restaurant owners think of table management as logistics. It's actually your most powerful revenue lever after menu pricing.

Tip 1: Track Turn Time Per Table

Turn time is how long a party occupies a table from seating to clearing. Track it for every table, every service. Most restaurants have no idea their average turn time is 82 minutes when 65 minutes is achievable without rushing guests.

Tip 2: Use a Digital Waitlist, Not a Paper One

A digital waitlist lets you estimate wait times accurately and notify guests via SMS when their table is ready. Guests who get accurate wait estimates leave far less often than guests standing awkwardly at the door staring at a clipboard.

Tip 3: Pre-Bus Tables Aggressively

Train your team to clear every plate and glass the moment it's empty. A cluttered table signals to guests that it's time to stay; a cleared table signals the meal is winding down naturally.

Tip 4: Enable Split Billing at the POS

One of the biggest time killers at table turnover is the billing process when large groups want to pay separately. A POS that handles split billing instantly removes 5–10 minutes of end-of-meal friction per group table.

Tip 5: Assign Tables Strategically

Don't seat a party of 2 at a table of 6. Use a floor map view to assign the smallest available table that fits each party. This sounds obvious but is frequently ignored under the pressure of a busy service.

Tip 6: Flag Long-Occupied Tables

Set a turn-time threshold. If a table exceeds 90 minutes (or whatever your target is), flag it on your floor map so the manager can check in. Often guests are just waiting for the bill — a simple prompt resolves it.

Tip 7: Offer Dessert and Coffee Proactively (With Timing)

Counter-intuitively, offering dessert when you want guests to leave actually speeds turnover. Guests who are "done" linger. Guests who are actively engaged with dessert finish within 15 minutes and then naturally conclude the meal.
